Brown Betty Recipe
1 pint bread crumbs or dry bread moistened
1 quart chopped sour apples
1/2 pint sugar
2 tsp cinnamon
4 tbp butter
Arrange bread and apples in layers in a pudding dish, beginning and ending with the bread crumbs, seasoning each layer with the sugar and spice and spreading the butter over the top. Cover it till the apples are soft, then uncover to brown.
Three heads of lettuce, two teaspoonfuls of green mustard leaves; a handful of water-cresses; five tender radishes; one cucumber; three hard-boiled eggs; two teaspoonfuls of white sugar; one teaspoonful of salt; one teaspoonful of pepper; one teaspoonful of made mustard; one teacupful of vinegar; half of a teacupful of oil. Mix all well together, and serve with a lump of ice in the middle.
